Dr. Adam Kleinberg is no simple Greenwich bartender: hes a mixologist, a naturalist, an adherent of wellness, a father, a vegan, an aspiring documentary filmmaker and a chiropractic doctor. Hes a man as complex as the drinks he mixes.
Its knowing proportions that makes all the difference, Kleinberg says producing a Saturday at Dawn, a recent concoction. Last Saturday this woman named Dawn came into the bar and told me to mix this and that. So I told her, let me tweak this a bit and this is what I came up with.
Having no formal bartending training Kleinberg said, The best way to learn to bartend is to work at a place with a really good bartender and just ask questions. He recently moved from California and now works at LEscale Restaurant Bar on the waterfront in Greenwich where his father is the bar manager.
As much as he enjoys bartending in Greenwich, Kleinberg came back to the area when his wife took his three daughters to Canada and never came back. Hes currently filing an international treaty to get this children returned to him.
For me, regardless of what Im going through Im a pretty happy person, he said. I look at this with a Buddhist perspective; I dont know how its going to turn out, so why judge it now?
Kleinberg has practiced a holistic lifestyle for 25 years and applies his philosophies to his other profession, chiropractics. With chiropractics you have to start at the source, the brain, the graduate of University of Bridgeport College of Chiropractic said. If theres interference it cant optimally communicate with the body. Chiropractics align the spine to connect the brain to the body.
In the future, he wants to start a wellness camp for children and document their experiences. For now, Kleinberg can be found at the outdoor bar at LEscale, Friday through Monday.
