The facility, at 160 E. Putnam Road, carries cuts of beef, pork, lamb and chicken from animals raised on small, local farms in New York and Connecticut.
The shop also has catering services available.
The butchery is the fourth Fleishers shop to open, joining its New York counterparts in Kingston and Brooklyn, along with its sister store in Westport.
To celebrate the opening, Fleishers will join forces with other establishments to host a special "Monger Mingle" open house night for the community from 7-9 p.m. Thursday.
Guests will sample food from Fleishers and its neighbors, Greenwich Cheese Company and Fjord Fishery, along with complimentary tastings of beer and wine.
